If you know where both of those came from, then you’re my type of people. I am so glad that so many of you wanted the recipe to this one-pot Cabbage Roll Casserole. I was in the mood for something different & thought I would give this a try (my own version). I loved it! Now, if you like it saucy then I want you to add more marinara than I did. I was going for more of a tomato “flavor”, so the other seasonings could soak up into the cabbage and meat. Bold flavor in every bite guys! I will make it again with more marinara to see which style I enjoy more.
Now on to the recipe! I used ground turkey (my preference), but you can definitely use a lean ground beef. The choice is yours! As always, if you make it let me know what you think. 1lb lean 85/15 ground turkey (or beef)
1/2 red bell pepper (cut in strips)
1 yellow onion (diced)
1 cup shredded mozzarella
1 jar of Raos Homemade marinara
1 medium sized cabbage (chopped)
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp paprika
1 tbsp olive oil
1/4 cup water (if needed)
Place large pot on medium high heat
Brown ground turkey with garlic & onion powder for about 3 minutes (continuously stirring & breaking up meat)
Turn down to medium low heat & add in onions (do not drain)
Take the meat out & place in a bowl (leave meat juices in the pot)
Add olive oil to same pot, then throw in cabbage & bell peppers
Continuously stirring, add paprika (Taste first. You can add more garlic here if you love garlic like me!)
*if juices are drying up before cabbage starts getting soft, add water
Once cabbage is soft, add meat back in & desired amount of marinara (I used about 1/2 cup of marinara for a tomato flavor. If you want is saucy add more.)
Cover pot & simmer on low heat for about 5 minutes
Then top with shredded mozzarella
