A little birdy told me it was Salmon Sunday. If you’re celebrating, then this herby Salmon + Pasta dish is for you. I baked the salmon & baby broccoli in a round cake pan. Ok lets be honest. My baking sheet was in the sink and I didn’t feel like washing it at that moment. Funny thing is, it look really cute in the cake pan. It was a perfect fit! haha
The pasta sauce was my favorite experiment. I call it an experiment because I’ve never made pasta sauce from scratch, unless it was from a recipe. I hoped for the best as I added the ingredients in and to my surprise it came out perfect! This recipe is so simple, yet delightful. Let me know what you think!
Herby Salmon + Pasta (serves 2)
6 oz salmon filet or two 3 oz filets
1 tsp of lemon pepper seasoning
1 tbsp of Mrs Dash garlic herb seasoning
1 packet of Urban Accents parmesan Mediterranean seasoning
1 tbsp of minced garlic
2 tbsp of organic butter
1 tbsp of olive oil
1/2 cup of chopped parsley
1 cup of non dairy milk
1 cup of parmesan cheese
1/2 box of Barilla linguine noodles
1 cup of halved cherry tomatoes
1 bunch of baby broccolini
Set oven to 375, pull out a cake pan or baking sheet.
Rub in a little bit of olive oil all over salmon & sprinkle garlic herb/lemon pepper seasonings. Then place salmon on pan.
Add baby broccolini to pan. Drizzle 1 tbsp of olive oil over broccolini & sprinkle the parmesan Mediterranean seasoning.
Cover pan with aluminum foil & place into oven for 20 minutes. Then set to the side to cool. If you made the 6oz, cut in half.
Following instructions from the box, boil linguine to al dente & then drain.
In a large skillet on medium heat, whisk in 2 tbsp butter/1 tbsp garlic/ 1 cup milk/ 1/2 cup parsley/ 1/2 cup parmesan cheese to skillet. Turn down heat to medium low and let simmer for 2 minutes.
Remove skillet from heat & toss in drained noodles. Add 1/2 parmesan cheese & stir noodles around to evenly coat the pasta.
Add desired amount of noodles to two bowls with broccolini & salmon.
Add in cherry tomatoes to pastas & if you want to add more parmesan & parsley, do it. I did! haha
